The Best, Easy, Vegetarian Lasagne Main Course Menu

You don't have to be vegetarian to love this lasagne recipe. The noodles don't have to be pre-cooked so you only need two dishes to create it.Here is what you need:1/2 box lasagne noodles
One 24 oz. jar of your favorite pasta sauce
Two cups shredded mozzarella cheese, divided
16 oz. low fat cottage cheese
Two eggs
1/2 parmesan cheese
16 oz. frozen chopped spinach, thawed
Dry parsley flakes
9" X 13" baking pan
Large bowlPreparation:In a large bowl, mix the cottage cheese, one cup shredded mozzarella, parmesan cheese and two eggs. Spread 1/3 of the pasta sauce on the bottom of the 9" x 13" pan. Lay three or four dry noodles on the sauce. Spread 1/2 of the cheese mixture and 1/2 of the thawed spinach over the noodles. Repeat 1/3 sauce, three noodles, 1/2 cheese mixture, remaining spinach. Place three noodles on the top and spread remaining sauce over the noodles. Cover with aluminum foil and bake for one hour.Remove foil, spread remaining one cup shredded mozzarella cheese over the top and sprinkle with dry parsley flakes. Return to oven for five minutes, uncovered. Remove from oven and let cool for 15 minutes.This lasagne is great because you can cut it up and freeze it. It really tastes better if it sits for a day. You can microwave it too, for an easy, frozen, fix ahead meal.It is not necessary to add any salt or oil to this recipe. It tastes great just the way it is.For the salad, this is what you will need:One head Romaine lettuce
One red onion
One large tomato
Japnese rice vinegar in your favorite flavor
Fresh black pepperTear the lettuce into bitesize pieces. Cut the tomato into bitesize chunks. Slice the onion into thin circles. The rice vinegar is almost calorie free but has a lot of flavor, making this a low fat salad. Sprinkle with fresh ground black pepper.For the garlic bread, this is what you will need:Trader Joe's multigrain sourdough bread with sunflower and sesame seeds
Butter or olive oil
Fresh garlic clovesPreheat the broiler for five minutes. Lightly butter or oil the bread slices. Crush and chop one clove of garlic for each slice of bread and sprinkle on top. You can also lightly sprinkle some parmesan cheese on the bread if desired. Place bread in a shallow pan and broil for a few minutes until top starts to turn golden brown. Watch carefully so bread does not burn. You will have a crispy top and soft bottom to your garlic bread.Here you have some great comfort food, but it is still healthy. Enjoy.
